Powerful Guacamole

Avocado is a 'generous' fruit, which provides over 20 different nutrients in just one serving (1/3 of the avocado) (Harvard, 2018). Most of these nutrients are especially good for supporting your heart and lowering down LDL cholesterol levels. But avocado is also very rich and fatty, that's why I prefer mixing it with other yummy things, like beans or chickpeas for example. 

 

By adding these proteins, you are actually making your mixture much more powerful. My favourite 'goto' ingredient is white beans - they are almost tasteless, but make the texture of the guacamole thicker and more tangible.

 

Sprouts, nuts, olive oil, hemp seeds, dill, cucumber, apple cider vinegar, lemon and sweet paprika... mmmm, all these elevate my guacamole mixture to a completely new level. 

 

Now, you can dip chips or crispy breads into guacamole. But I say - sweet potatoes. Freshly roasted and warm, they are the best combo ever with guacamole. 

 

Sweet Potato and Guacamole Recipe

Makes: enough guacamole for 1 big potato

Takes: 25 minutes (mainly potato baking)

Ingredients:

1 big sweet potato

1 middle size avocado

2 tbsp of white beans or chickpeas

2 tbsp chopped cucumbers or skinless green apple

2 tbsp hemp seeds (optional)

1 tbsp apple cider vinegar

1 tbsp lemon juice

1 tbsp olive oil

a hand full of sprouts

sals, black pepper and sweet paprika

fresh dill or chives (optional)

 

Let's do it in just three steps:

1.  Wash the sweet potato (you can peel it if you want - I don't). Chop it into thick (1cm/0,39 inch) circles and bake in the preheated oven (180C/356F/fan) for 20 minutes. You can drizzle the circles with salt, sweet paprika and olive oil .. or even some rosemary. Whatever you love!

2. In the meantime, gently mix all the guacamole ingredients in a separate bowl and let it rest. Do not put salt at this stage as it will kill all veggies and herbs and make them release all the juice. You don't want your mixture to soak in water. 

3. Finally, add the mixture onto hot potatoes and enjoy your snack .. or meal! Both hot and cold, these potato toasts will make your day! Yum!
